Banana breakfast compilation

For some reason, banana is the perfect fruit for breakfast or as a snack. A rich and satisfying fruit, so versatile and also a good source of vitamins and potassium. This is a compilation of some of my favorite banana flavored breakfasts and snacks. Let’s go bananas! 😉


Probiotic banana mousse

When you don’t feel like having a complete breakfast, or you need something lighter, this is the perfect solution. I’ve always had difficulties to eat something cold like yogurt or plant-based yogurt as soon as I wake up. In the mornings, my body needs something warm or at room temperature. That’s why I often prepare a quick and easy banana mousse. I call it my ‘banana yogurt’ simply because, even if not fermented so not technically a yogurt, I like to mix some probiotics inside it.

Ingredients for 1 serving

  • 1 banana, in chunks
  • 80 ml of coconut milk, or another plant-based milk of your choice
  • 1 tsp of probiotic powder or the powder of a probiotic capsule. You can omit this ingredient if you don’t use it, but it gives a nice healthy touch to it
  • Fresh fruit of your choice for decoration


  • 1 tsp of agave syrup, or another plant-based sweetener of your choice
  • a sprinkle of powdered cinnamon or mixed spice


Place the ingredients in your food processor, blend them for a few minutes, until you obtain a smooth and creamy consistency. Add some more plant-based milk in case the result is too dry. Serve in a dessert cup, and decorate with fresh fruit if you like.

Probiotic banana mousse


Butterfly granola banana

This beautiful looking banana breakfast is going to really wake up your appetite!

Ingredients for 1 serving

  • 1 banana, sliced lengthwise in halves
  • 1 tsp of nut butter, I’m using roasted almond butter, but any other kind will do
  • a handful of chocolate flavored granola
  • a sprinkle of coconut flakes
  • a sprinkle of almond flakes
  • a sprinkle of chia seeds
  • a few raisins


Spread the nut butter on the banana, just as if it was a slice of bread, and top it with the granola, the flakes, the seeds, and raisins.

Salted caramel banana nice-cream with strudel burrito 

I love this warm and frosty combo, it’s incredibly easy to prepare and it tastes just as delicious as it sounds.

Ingredients for 1 serving

For the banana nice-cream

  • 1 frozen banana, in chunks
  • 30 ml of soy milk or any other plant-based milk of your choice
  • a sprinkle of almond flakes or other nuts of your choice

For the salted caramel

  • 15 pitted dates, rehydrated in hot water
  • ½ vanilla pod, scraping out the seeds or 1 tsp of natural vanilla flavor
  • 100 ml of water
  • a sprinkle of pink Himalayan salt

For the strudel burrito

  • 1 tortilla
  • 1 apple, in small dices
  • the juice of ½ lemon
  • a sprinkle of powdered cinnamon
  • a sprinkle of powdered clove
  • a few raisins
  • a sprinkle of pine nuts or almond flakes
  • a sprinkle of maple syrup, agave syrup or any other sweetener of your choice


Take the frozen banana outside the freezer and set it aside.

In a high-speed mini blender or in a traditional blender, blend all the ingredients for the salted caramel, until you obtain a creamy consistency, and set it aside.

Mix the diced apple with the lemon juice, the spices and bake in the oven at 180° C for 15 minutes, or with the crisp function of your microwave for 5-8 minutes, until they are soft but not too dry. Heat up the tortilla in a pan or in your microwave, top it with the baked apple, the raisins, the nuts, a sprinkle of plant-based sweetener, and roll it.

In a high-speed mini blender or in a traditional blender, blend all the ingredients for the banana nice-cream, until you obtain a consistency similar to a traditional ice-cream. Top it with the salted caramel you previously prepared, the almond flakes or other nuts. Serve together with the warm strudel burrito.

Old time favorite banana on toast

Of course, how not to mention a classic like banana on toast? This is a breakfast that doesn’t need any introduction!

Ingredients for 1 serving

  • 1 banana, in slices
  • 2 tsp of nut butter, or a chocolate/vanilla spread
  • a slice of your favorite bread
  • a sprinkle of cinnamon


Toast your favorite slice of bread, top it with the nut butter, or the chocolate / vanilla spread, and decorate it with banana slices. If you like, you can also add a sprinkle of cinnamon on top.
