Eggless egg salad

I’ll go out on a limb here and say that after you read this title you thought: ‘Whaaat?’.

Well, if you are following a plant-based diet, or you want to lower your cholesterol intake, or you simply want to eat something that you like, quick to prepare, but you prefer to keep it lighter, this is the perfect solution. A great idea after the feasts, when we all feel like we need to start those resolutions, pending from two years ago. 😉 Ideal for a quick lunch or a snack, and rich in protein. Let’s see how to make it.

Ingredients for 2 servings

  • 200 g of medium-firm tofu
  • a handful of fresh chives, roughly chopped
  • 1 tsp of curry powder
  • 1 tsp of agave syrup, date syrup, or any other sweetener or your choice
  • 2 Tbsp of vegan mayonnaise, or traditional mayonnaise
  • a splash of mustard
  • salt and pepper to taste



Cut the tofu into thin irregular pieces, to make them look like a traditional egg salad would. Medium-firm tofu, in my experience, is the type of tofu that will help mimic the original consistency.

In a bowl combine the tofu with all the other ingredients, and let it rest in the fridge a few hours if you can. It will help the flavors to come together.

You can spread it on your favorite bread, make a sandwich, and even top it with fresh vegetables.
