This easy French toast is stunningly healthy, totally plant-based, and it’s so incredibly easy to prepare that you will fall in love with it. You can have a perfect French toast in a few minutes, feel satisfied and get going with your day without feeling bloated. The turmeric will mimic the egg color without all the added cholesterol, but with a ton of health benefits instead.
I like to put one slice of bread on top of the other and spread some maple syrup on top of them, as if they were pancakes. I also like to accompany the French toasts with fresh fruit, to add a nice touch. If you have some leftover batter, you can use it the day next. Or you can simply make more slices of it, if you really can’t resist. 😉 You must try it. Take a look at what you’ll need.
Ingredients for 2 servings
- 6-8 slices of wholegrain bread
- ¼ teaspoon of turmeric
- ¼ teaspoon of cinnamon
- ½ tsp of natural vanilla flavor, or a 4 cm vanilla pod piece, scraping out the seeds
- 200 ml of soy milk, or another plant-based milk of your choice
- 1 tsp of chia seeds, or ground flaxseeds
- 3 Tbsp of water
- ½ Tbsp of maple syrup, or another sweetener of your choice, + 1 splash
In a small bowl, combine the chia seeds with the water, mix and wait a few minutes, until it turns into a jelly consistency.
Place the plant-based milk, the spices, the chia seeds mixture, and the maple syrup in your high-speed mini blender or traditional blender, and blend for about 1 minute to make the batter.
Toast the slices of bread. In a deep plate, quickly dip the toasted bread into the batter, making it softer but not too soggy. Serve with a splash of maple syrup on top and some fresh fruit on the side.
