Tomato Bruschetta 3 ways

Typical Italian starter, perfect as a snack, and even as a breakfast. So simple and quick to make, you can top it with virtually anything. I’ll show you a basic recipe and a few variations to spice it up. A perfect idea for the summer approaching.

 

Ingredients for 2 servings

For the base

  • 1 loaf of bread of your choice, better if whole wheat, in slices.
  • ½ clove of garlic, without the green germ.
  • a splash of extra-virgin olive oil
  • salt and pepper to taste

 

Traditional tomato

  • 20 cherry tomatoes or 2 larger tomatoes, diced
  • a handful of fresh basil leaves, roughly chopped. You can use fresh oregano as a variation.
  • a splash of extra-virgin olive oil
  • salt and pepper to taste

 

Tomato, Taggiasche olives, and capers

  • 20 cherry tomatoes, or 2 larger tomatoes, diced
  • 30 g of Taggiasche olives, or any other olive, pitted, in halves
  • 1 tsp of capers, roughly chopped
  • 3 sprigs of fresh oregano, roughly chopped
  • a splash of extra-virgin olive oil
  • a sprinkle of chilli powder
  • salt and pepper to taste

 

Tomato, Parmesan, and balsamic vinegar

  • 20 cherry tomatoes or 2 larger tomatoes, diced
  • 1 Tbsp of Parmesan cheese + some shaved pieces for decoration, or nutritional yeast
  • a handful of fresh basil leaves, roughly chopped
  • 1 Tbsp of toasted pine nuts
  • a splash of balsamic vinegar
  • a splash of extra-virgin olive oil
  • salt and pepper to taste

Method

To prepare the base cut the bread into slices and toast them. Gently rub the garlic on top of the slices. You can skip the garlic entirely if you prefer. Add a splash of extra-virgin olive oil, and season.

In a bowl mix the chosen topping, then gently place it on the bruschetta bread, and serve.
